Tantalizing Tuna Pasta!

OK, so the weather is still a little sketchy most days, but we're increasingly seeing the occasional glimpse of sunshine, fluffy clouds and blue skies. Naturally enough a bloggers mind turns to picnic foods :)  Absolutely top of the list for us is tuna pasta! Perfect for Picnics or a summer dinner with a crispy salad :)

There are as many recipes for tuna pasta as there are cooks who make it, everyone has their own little touches that make it original.  I thought I'd share our version here in hopes that you'll love it as much as we do :)
This really isn't a recipe as much as a rough guide, because it should be made to your own personal taste :) I've made it for so many years that I never measure anything it's a little pasta here, a couple of small cans of tuna there, a few large spoonsful of mayonnaise here, sometimes I even add sweetcorn :) Really don't fret weights & measures, there is no right or wrong, here just treat this as a rough guide and have fun!

Tantalizing Tuna Pasta

Ingredients:

2 cans of tuna in brine
1 small/medium pack of your favourite pasta! seriously I've used macaroni, spiral, penne, all fabulous so pick your fave :) In the photo above I've used penne.
1 small red onion (again, I like red onion, but brown just as good)
1 small jar of mayonnaise (we use extra light version but again, use your favourite)

Directions:

1. Put pasta into a pot of boiling water. Simmer till pasta is cooked, usually 10-12 mins but cook till you're happy with texture, drain and set aside.

2. While the pasta is cooking, carefully chop your onion. Again this is personal, I chop roughly, leaving onion in larger pieces, others chop finely, so do as you prefer :)

3. Open & drain your cans of tuna. Set aside.

4.Assemble your tuna pasta by combining your cooked pasta, mayonnaise, onion and tuna. Mix well

5. Eat & enjoy!

This makes a fabulous dinner served with a crisp side salad or with a lovely fluffy baked potato :) Any leftovers can be popped into a container and stored in the fridge for later.  Makes a great snack with toast oddly enough, and hubby asked me to say it's great as a work day lunch :)

Food should be fun, don't you think? Sometimes it's fun to throw away the rules and just experiment, so have fun, add ingredients, adjust to suit your own tastes and enjoy :)
